Simple and Easy Roast Chicken

- 1(4lb.) roasting chicken shopping list
- 1 head garlic shopping list
- 8 sprigs fresh rosemary shopping list
- 2 fresh lemons shopping list
- 2T. butter or olive oil shopping list
- 1t. coarse salt shopping list
- 1/2t. fresh ground black pepper shopping list
How to make it
- Preheat oven to 475. Wash and pat dry chicken with paper towel Coarsely chop bulb og garlic(don't bother to peel)
- Remove rosemary from4 of the stems and chop coarsley;reserve rest for later. Put chopped garlic,chopped lemons and chopped rosemary into chicken's cavity
- Rub the chicken with butter or oil and season with salt and pepper.
- Place chicken on rack in roasting pan and tuck remaining rosemary stems on the chicken,around wings and drumsticks.
- Roast in preheated oven 15 mins. Decrease oven temp. to 375 and cook 60-75 mins more or until juices run clear(depends on weight).
- Allow to sit at least 15 mins.before carving.
