This is a great pasta/tomato/beef dish.

Ingredients
  • 1 cup uncooked elbow macaroni (3 1/2 ounces)
  • 1 pound ground beef
  • 1 medium onion, chopped (1/2 cup)
  • 1 small green bell pepper, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 can (15 to 16 ounces) kidney beans, drained
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 can (11 ounces) whole kernel corn, drained
  • 1 can (8 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 1 T chili powder
  • 1 t. ground cumin
  • 1 cup shredded Cheddar cheese (4 ounces)

Directions
  1. Cook the macaroni as indicated on the package
  2. While the macaroni is cooking, cook beef, onion, bell pepper, and garlic in a dutch oven over medium-high heat, (or large electric skillet, medium-high heat), stirring occasionally, until beef is brown; drain.
  3. Drain macaroni. Stir macaroni and remaining ingredients except cheese into beef mixture. Heat to boiling stirring occasionally; reduce heat to low. Simmer uncovered about 20 minutes, stirring occasionally, until hot. Sprinkle with cheese.
  4. 1 serving = 325 calories (calories from fat 125); fat 14g (Saturated 6g); Cholesterol 45mg; Sodium 820mg; Carbohydrate 35g (Dietary fiber 6g); protein 21g.
