- 4 large eggs shopping list
- Pinch of salt shopping list
- 1-1/3 cups granulated sugar shopping list
- 1/2 stick unsalted butter, room temperature shopping list
- 2 tablespoons grated lemon peel shopping list
- 1/2 cup fresh lemon juice shopping list
How to make it
- In bowl, beat the eggs
- Place eggs in top of double boiler
- Stir in remaining ingredients until blended well
- Cook over simmering water about 30 minutes, stirring frequently until thick and smooth
- Lemon curd will thicken more as it cools
- When cool, cover and refrigerate
- Will keep 2 weeks in refrigerator
- This makes about 3 cups
- NOTE: Good to have on hand to dollop on your choice of goodies!
