Wonderful spanish style chicken and rice dish for the slow cooker.

Ingredients
  • 6 small skinless chicken breasts(about 4 lbs.)
  • 1T. dried oregano
  • 1T. chili powder
  • 2t.Ground cumin
  • 1/2t. salt
  • 1/4t ground black pepper
  • 1Tveg. oil
  • 1 can(14.5oz) diced tomatoes
  • 1 small onion,cut in 1" chunks
  • 2 garlic cloves
  • 1/2 chipolte chili(from canned chipolte in adobo)
  • 1 can low sodium chicken broth
  • 11/2c instant rice
  • 11/2c frozen peas
  • 1 pint cherry tomatoes
  • 1/4c coarsley chopped fresh cilantro
  • Lime wedges for serving

Directions
  1. Rinse chicken and pat dry.Combine oregano,chili powder,cumin,salt and pepper in a small bowl. Sprinkle half of spice mixture over chicken and rub in with fingers;set remaining aside.
  2. Heat oil in a large nonstick skillet over moderately high heat until hot but not smoking. add chicken and cook.turning until browned on all sides,about 8 mins. Transfer to 6qt. slow cooker
  3. Place canned tomatoes,onions,garlic,chipolte and remaining spice mixture in a blender Cover and blend till almost smooth;pour over chicken. Add broth
  4. Cover and cook on low 4-5 hours or on high 2-21/2 hours. Gently stir in rice,cover and cook on high,stirring once for 30 mins. Turn cooker off,stir in peas,cover and let stand 15 mins.
  5. Cut cherry tomatoes in half and toss with cilantro;serve over chicken and rice with lime wedges on the side.
