Ingredients

How to make it

  • Melt butter in large soup pot;; saute onion until soft.
  • Blend in flour and seasonings; gradually stir in broth, milk and beer. Cook over medium heat, stirring constantly until mixture comes to a boil; boil and stir 1 minute.
  • Stir in cheese; heat and stir until smooth.
  • Ladle into soup cups or bowls.
  • Garnish with popcorn

    This is one of my favorite soups of all time. Will be making this again very soon. Just enough spice to be extra flavorful without causing indigestion! And if it has beer in it, hubby will eat it....lol.

    Oh Mrs P, now you've got my heart racing...I MISS Byerly's so much - I worked at the one on France Ave when it first opened (yeah, way back when!). We had one in Schaumburg for about a year before our local chain ran them out of business...do you happen to have the recipe for their fantastic ham and wild rice soup?? This beer cheese soup will definitely be on our table soon - love the stuff!!
