How to make it

  • Preheat oven to 350 F. Butter a 9 x 5 inch loaf pan. line with waxed paper.
  • Drizzle thae apples with lemon juice.
  • Sift the flour, sugar, cocoa, baking powder, baking soda, and salt into a large bowl. Stir in the sugar.
  • Beat in the oil and egg yolks with an electric mixer at low speed until just blended.
  • Stir in the apples and nuts.
  • With mixer and high speed, beat the eggs whites, in a medium bowl until stiff peaks form. Use a large rubber spatula to fold them into the batter. Spoon the batter into the prepared pan.
  • Bake for 50 - 60 minutes, or until toothpick inserted into the center comes out clean.
  • Cool the loaf in the pan for 15 minutes.
  • Turn out onto a rack. Carefully remove the paper and let cool completely.
  • Dust with the cocoa ant he remaining 1 tablespoon confectioners' sugar.
