Chocolate Apple Loaf with Macadamia Nuts

- 2 large tart apples ( Granny Smiths), peeled, cored and grated shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 cup all purpose flour shopping list
- 1/4 cup + 1 tablespoon cocoa powder shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 3/4 cup granulated sugar shopping list
- 1/2 cup vegetable oil shopping list
- 2 large eggs, separated shopping list
- 1/2 cup macadamia nuts, coarsely chopped shopping list
- 2 tablespoon confectioners' sugar shopping list
How to make it
- Preheat oven to 350 F. Butter a 9 x 5 inch loaf pan. line with waxed paper.
- Drizzle thae apples with lemon juice.
- Sift the flour, sugar, cocoa, baking powder, baking soda, and salt into a large bowl. Stir in the sugar.
- Beat in the oil and egg yolks with an electric mixer at low speed until just blended.
- Stir in the apples and nuts.
- With mixer and high speed, beat the eggs whites, in a medium bowl until stiff peaks form. Use a large rubber spatula to fold them into the batter. Spoon the batter into the prepared pan.
- Bake for 50 - 60 minutes, or until toothpick inserted into the center comes out clean.
- Cool the loaf in the pan for 15 minutes.
- Turn out onto a rack. Carefully remove the paper and let cool completely.
- Dust with the cocoa ant he remaining 1 tablespoon confectioners' sugar.
