Cranberry Coconut Fruit Balls Recipe
This is a wonderful treat. It can be classified as a dessert, a candy or just a great appetizer. I love them and always eat way too many when I make them. Hope you enjoy them as much as I do.

Ingredients
  • 12 ounces dried apricots
  • 1-1/2 cups pecans
  • 2 cups fresh cranberries rinsed and drained
  • Grated orange peel from 1 orange
  • 1/4 cup butter
  • 1 pound confectioners' sugar
  • 13-1/2 ounces graham cracker crumbs
  • 7 ounces coconut flakes

Directions
  1. Coarsely grind apricots with pecans and cranberries.
  2. Stir in rind, butter, sugar and crumbs then wrap and chill for 2 hours.
  3. Shape mixture into 3/4 inch balls.
  4. Roll balls in coconut.
  5. Store in refrigerator until ready to serve.

Alterations


I thought this looked like a great recipe for Christmas treats, and it is. I made a half recipe to try it, and not all of it got made into balls... wonder why?
My alteration:
To cut down on the sugar, I only used 2 oz. sugar (for the half batch). I also mixed in the coconut and added 2 Tbsp. of melted coconut cream, just because I love coconut. I just hope they last until Christmas so the rest of the family can try them!!

~ I found they rolled into balls easier with damp hands.
~ Great for someone watching their sugar intake.
