New England Lamb Bake

- 1 tablespoon cooking oil shopping list
- 2 pounds boneless lean lamb shopping list
- 1 white onion chopped shopping list
- 1/4 cup all-purpose flour shopping list
- 5 cups chicken broth shopping list
- 2 carrots sliced shopping list
- 2 leeks cut into 2 inch pieces shopping list
- 2 tablespoon minced fresh parsley divided shopping list
- 1 bay leaf shopping list
- 1/2 teaspoon dried rosemary shopping list
- 1/4 teaspoon dried thyme shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 3 potatoes peeled and sliced shopping list
- 1/4 cup butter shopping list
How to make it
- In a large Dutch oven heat oil then brown lamb and onions.
- Stir in flour and mix well then gradually add broth and bring to a boil stirring to remove browned bits from pan.
- Add carrots, leeks, 1 tablespoon of parsley, bay leaf, rosemary, thyme, salt and pepper then spoon into a greased 3-quart casserole.
- Cover with potatoes and dot with butter.
- Bake at 350 for 2 hours.
- Garnish with remaining parsley.
