Grougere Cheese Puff Rolls

- 1 cup milk shopping list
- 4 tbsp. butter cut up shopping list
- 1 tsp. salt shopping list
- Dash of freshly ground pepper shopping list
- 1 cup sifted flour shopping list
- 4 eggs shopping list
- 5 oz. swiss cheese, finely diced shopping list
How to make it
- Scald milk and cool. Strain into a medium saucepan . Add butter, salt and pepper. Bring mixture to a rolling boil and add flour all at once.
- Cook paste over low heat beating briskly with a wooden spoon until mixture forms a ball and leaves sides of pan.
- Remove from heat. Beat in eggs (1 at a time) blending thoroughly before adding the next egg.
- When paste is shiny and smooth mix in all, but 2 tablespoon cheese and cool..
- Scoop out pieces of dough, the size o fan egg, form a ring, leaving a 2 1/2 “diameter in center and place on a buttered cookie sheet.
- Sprinkle with remaining 2 tbsp. Cheese and bake at 375 F. for 45 minutes or until puffed and golden brown.
