How to make it

  • 1. Put the condensed milk, butter, egg yolk and cocoa powder in a pan and mix them all together
  • 2. Let the mixture cook over low heat for about 12 minutes, stirring it constantly until the mixture loosens from the bottom of the pan and it is thick like cream.
  • 3. Put the mixture on a greased plate and allow it to cool down completely.
  • 4. Roll 1 teaspoon of mixture into small balls. Tip: Grease your hands with butter before making the small balls. Wash your hands once in a while if necessary
  • 5. Put the chocolate sprinkles in a bowl and roll the small balls in the chocolate sprinkles.
  • 6. Place balls in small paper patty cases and then on a serving plate.

    I just made this and it was terrific! I'm not an experienced cook and this was so easy. Lulu: I had no problem with burnt pieces or sticking. It might be because as soon as it was done I immediately poured it into a different bowl to cool. I learned to do that when making cream of wheat--anything with milk in it will burn if you leave it in the hot saucepan to cool. My daughter LOVED this candy! I would like to try to make it with coconut oil next. (I recently made a large white cake for a celebration and I have several egg yolks left!)
    We rolled ours in pink sugar for Valentine's Day.

    Once you make it, you will see what I mean about burnt pieces following this recipe. It might taste good, but the texture will be awful. Brigadeiros are extremely smooth, without sticky pieces on it. Aluminum pots are poisonous. glazed pots burn it. Teflon pots give release pieces if the pot is not really new. And they burn it as well. So now you know which one to use. The right fat is not butter. This is what the housewives in Brazil use, but not professionals. There's a huge difference in texture. The homemade version will never be as good. But that is the tip I will not give here. Just remember: go organic !

    Bad recipe. Brigadeiros don't have eggs. The wrong pot and wrong fat will give it burnt pieces, not a smooth texture. The temperature has to be very very low and you MUST stir constantly. Anyone can make Brigadeiro, but few can make it perfectly. Every recipe has its secrets. Butter burns it as well the wrong pot. A wooden spatula specially for sweets is a MUST. Go organic!     I love brigadeiros, I learned to make this same recipe without the egg, I will have to try it with the egg. I love making brigaderiros but with other toppings as well like, coconut, chocolate powder, crusted peanuts, powdered sugar or sliced and broken almonds.
