Ingredients
  • 1 loaf of Italian bread cut into 1 inch thick slices
  • 2 large finely chopped tomatoes
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons virgin olive oil
  • 1 teaspoon chopped basil, fresh
  • 2 teaspoons chopped parsley, fresh
  • 1/2 finely chopped sweet onion
  • 1 tablespoon chopped oregano, fresh

Directions
  1. Preheat the oven to 400F (200 degrees C). Combine tomatoes, olive oil, onion, basil, parsley and oregano, basil and parsley in a mixing bowl. Arrange sliced bread on a baking sheet, and spoon tomato mixture evenly on each slice. Top with Parmesan cheese. Place in preheated oven for 8 to 10 minutes until bottom of bread is toasted. Let stand and set on baking sheet for up to 5 minutes. Serve warm and toasty.

Alterations


Ater baking 8 mins, we topped ours with shredded mozzarella cheese and baked for another 3 mins. Tasted the same as what we usually order from a local restaurant.
