Shrimpy Pasta Delight

- 6 ounces pasta (any kind will do) shopping list
- 12 ounces fresh medium shrimp peeled and deveined shopping list
- 1-1/2 teaspoons bottled minced garlic shopping list
- 1 tablespoon olive oil shopping list
- 1 cup chicken broth shopping list
- 1 tablespoon cornstarch shopping list
- 1 teaspoon dried basil crushed shopping list
- 4 cups prewashed baby spinach shopping list
- 1/4 cup finely shredded parmesan cheese shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Cook pasta according to package directions then drain well and keep warm.
- Meanwhile rinse shrimp and pat dry.
- In a large skillet cook garlic in hot oil over medium high heat for 15 seconds.
- Add shrimp and cook for 3 minutes stirring constantly.
- Remove shrimp.
- Combine broth, cornstarch and basil then add to skillet and cook until thickened and bubbly.
- Add spinach and cook 2 minutes more.
- Return shrimp to skillet and stir to combine.
- Toss shrimp mixture and pasta together then sprinkle with parmesan and pepper.
- Serve immediately.
