Shrimpy Pasta Delight Recipe
I have not tried this yet but fully intend to. It looks very tasty in the magazine I obtained this from. Enjoy.

Ingredients
  • 6 ounces pasta (any kind will do)
  • 12 ounces fresh medium shrimp peeled and deveined
  • 1-1/2 teaspoons bottled minced garlic
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 1 teaspoon dried basil crushed
  • 4 cups prewashed baby spinach
  • 1/4 cup finely shredded parmesan cheese
  • 1 teaspoon freshly ground black pepper

Directions
  1. Cook pasta according to package directions then drain well and keep warm.
  2. Meanwhile rinse shrimp and pat dry.
  3. In a large skillet cook garlic in hot oil over medium high heat for 15 seconds.
  4. Add shrimp and cook for 3 minutes stirring constantly.
  5. Remove shrimp.
  6. Combine broth, cornstarch and basil then add to skillet and cook until thickened and bubbly.
  7. Add spinach and cook 2 minutes more.
  8. Return shrimp to skillet and stir to combine.
  9. Toss shrimp mixture and pasta together then sprinkle with parmesan and pepper.
  10. Serve immediately.

I make this recipe also. Instead of pasta, I use refrigerated cheese tortellini. I use one can of diced tomatoes in place of the broth.
