How to make it

  • Cook pasta according to package directions then drain well and keep warm.
  • Meanwhile rinse shrimp and pat dry.
  • In a large skillet cook garlic in hot oil over medium high heat for 15 seconds.
  • Add shrimp and cook for 3 minutes stirring constantly.
  • Remove shrimp.
  • Combine broth, cornstarch and basil then add to skillet and cook until thickened and bubbly.
  • Add spinach and cook 2 minutes more.
  • Return shrimp to skillet and stir to combine.
  • Toss shrimp mixture and pasta together then sprinkle with parmesan and pepper.
  • Serve immediately.

    I make this recipe also. Instead of pasta, I use refrigerated cheese tortellini. I use one can of diced tomatoes in place of the broth.
