Ingredients
- 2litres chicken broth
- about 2c cubed ham or 1 farmer sausage
- 1large onion chopped
- 1 1/2 c celery, chopped
- couple cloves garlic, smashed
- about 4-6 cups of frozen green beans, yellow beans, carrots combo (I get mine from Costco), or equivalent mixture of fresh.
- 1 bay leaf
- some whole peppercorns
- few sprigs of summer savoury (use thyme if you don't have savoury)
- 2-3 large potatoes cubed
- salt to taste
- sprinkle of red pepper flakes
Directions
- Grab a stock pot, I think mines about 8L capacity, and put in your chicken broth and meat.
- Add onion,celery.garlic,bay leaf, peppercorns, savoury, red pepper flakes,and salt.
- Bring to a boil over med-high heat
- Add potatoes and bean/carrot mix
- Return to boil,then turn down to simmer.
- Simmer about 30 min til potatoes are done, or longer if you enjoy a long slow simmered soup.
- Add water if soup is getting too thick.
- My mom would always boil, then lightly saute some homemade noodles (kielke) and put them in the soup bowl before adding the soup. Finish off with a splash of half and half if desired. Serve with some nice crusty bread and butter. True comfort food!
