Chicken Tikka

- 4 chicken breasts (boneless, skinless) shopping list
- juice from 4 lemons shopping list
- 1 tbsp of salt (15ml) shopping list
- 1/2 cup of plain yogurt (125ml) shopping list
- 3 tbsp of ground almonds (15ml) shopping list
- 1 tbsp of freshly grated ginger (15ml) shopping list
- 5 cloves of garlic shopping list
- 3 tsp of paprika (15ml) shopping list
- 2 tsp of garam masala (10ml) shopping list
- 1 tsp of turmeric (5ml) shopping list
- 1/2 tsp of freshly ground pepper (2.5ml) shopping list
- 1/2 tsp of cayenne pepper (2.5ml) shopping list
- extra virgin olive oil shopping list
How to make it
- Combine chicken lemon juice and salt in a large bowl and toss until the chicken is well coated. Place the chicken and the remaining liquid into a large plastic bag.
- In another bowl, combine yogurt, almonds, ginger, garlic, paprika, garam masala, turmeric, pepper & cayenne.
- Mix well and pour over the chicken. Toss and coat the chicken in the mixture.
- Close the bag and place it in the fridge to marinate for 4 hours up to overnight.
- Remove the chicken from the refrigerator ½ hour prior to cooking time. Leave it to come to room temperature.
- Preheat the grill to medium high heat. Oil the grill grate and then place the chicken on.
- Cook for 7-8 minutes per side.
