  • Oil for frying
  • 2 Tbsp cream
  • Buttermilk
  • 2 eggs
  • 1 cup sugar
  • 2 1oz squares baking chocolate
  • 1 tbsp. butter
  • 31/4 cups flour
  • 1/2 tsp. salt
  • 1/4 tsp nutmeg
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • Confectioners' sugar

Directions
  1. Heat oil in deep sided pan to 375ºF. (I use my electric skillet)
  2. Add enough buttermilk to cream to make 1 cup. Set aside.
  3. Beat eggs with sugar. Melt baking chocolate with butter; cool.
  4. Sift together flour, salt, nutmeg, baking powder and soda. Add flour and liquid alternately (about 1/2 of it) to the egg mixture. add melted chocolate, then the remaining flour and liquid. Add the vanilla; blend to moisten.
  5. Drop by teaspoonfuls into a hot oil (375ºF)by using two teaspoons, dipping the "dipping" teaspoons into the oil so the dough won't stick. Use the other teaspoon to ease the dough into the hot oil.
  6. Fry until evenly browned. Drain on paper towels. Dust with confectioners' sugar.
