Cheesey Scalloped Potatoes Recipe
A good side dish to serve with meatloaf.

Ingredients
  • 5 large potatoes, peeled & sliced thin
  • 3 Tbsp. flour
  • 1-1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1-1/4 Cup Shredded cheddar cheese, divided
  • 3/4 Cup shredded swiss cheese
  • 1 large onion, finely chopped
  • 1-1/2 Cups milk
  • 2 Tbsp. fresh parsley, minced

Directions
  1. Preheat oven to 350 degrees.
  2. Place a third of the potatoes in a shallow 3qt. baking dish coated with cooking spray.
  3. In a small bowl combine the flour, salt & pepper; sprinkle half over the potatoes.
  4. Sprinkle a 1/4 cup of each cheese & half of the onions.
  5. Repeat another layer, being sure to have some cheese reserved for near the end of baking.
  6. Top with remaining potatoes.
  7. Pour milk over it all.
  8. Cover & bake for 50-60 minutes or until the potatoes are nearly tender.
  9. Sprinkle with remaining cheeses and cook uncovered for 10 minutes longer or until the cheese is melted & potatoes are tender.
  10. Sprinkle with parsley.
