How to make it

  • Bring enough salted water to cover the potatoes to a boil, in medium saucepan.
  • Place potatoes in boiling water and reduce heat to low.
  • Cover and cook until tender, around 15 minutes.
  • Do not overcook.
  • Remove the potatoes and cool.
  • Just before serving, cut each potato in half and scoop out a portion in the center.
  • I usually slice a thin slice off the bottom to make them sit flat, but this is up to you.
  • Place a dallop of sour cream in the centers.
  • Top with cheese, bacon, and chives.
