Stuffed New Potatoes

- 12 small, red new potatoes shopping list
- 1/4 cup sour cream shopping list
- 1/4 lb bacon, cooked crisp and crumbled shopping list
- 1/4 cup shredded cheddar2 Tbsp chopped chives shopping list
How to make it
- Bring enough salted water to cover the potatoes to a boil, in medium saucepan.
- Place potatoes in boiling water and reduce heat to low.
- Cover and cook until tender, around 15 minutes.
- Do not overcook.
- Remove the potatoes and cool.
- Just before serving, cut each potato in half and scoop out a portion in the center.
- I usually slice a thin slice off the bottom to make them sit flat, but this is up to you.
- Place a dallop of sour cream in the centers.
- Top with cheese, bacon, and chives.
