German Style Mashed Potatoes

This is a fluffy and delicious potato accompaniment to any main dish..roast , chops , chicken etc. Serve piping hot. From Swiss Meats Recipes.
Ingredients
- 5 lbs red potatoes peeled and cubed shopping list
- 2 large tart apples peeled and chopped shopping list
- 1 lb applewood smoked cinnamon bacon diced shopping list
- 2 medium onions sliced shopping list
- 3 tbsp sugar shopping list
- 3 tbsp cider vinegar shopping list
- 2 tsp kosher or grey salt shopping list
How to make it
- Place potatoes in a large saucepan and cover with water
- bring to boil
- Reduce heat cover and cook for 10 minutes
- add apples cook 10 more minutes

- Meanwhile:
- cook diced bacon over med. heat until crisp
- remove bacon and put on paper towel to drain
- reserve 1 tbsp of drippings
- In the bacon drippings saute oniions untii lightly browned
- Drain potatoes and apples
- Add sugar vinegar and salt
- Mash slightly
- ______________-
- Transfer to a warmed serving bowl
- Top with onions and bacon
