German Style Mashed Potatoes Recipe

This is a fluffy and delicious potato accompaniment to any main dish..roast , chops , chicken etc. Serve piping hot. From Swiss Meats Recipes.

Ingredients
- 5 lbs red potatoes peeled and cubed
- 2 large tart apples peeled and chopped
- 1 lb applewood smoked cinnamon bacon diced
- 2 medium onions sliced
- 3 tbsp sugar
- 3 tbsp cider vinegar
- 2 tsp kosher or grey salt
Directions
- Place potatoes in a large saucepan and cover with water
- bring to boil
- Reduce heat cover and cook for 10 minutes
- add apples cook 10 more minutes

- Meanwhile:
- cook diced bacon over med. heat until crisp
- remove bacon and put on paper towel to drain
- reserve 1 tbsp of drippings
- In the bacon drippings saute oniions untii lightly browned
- Drain potatoes and apples
- Add sugar vinegar and salt
- Mash slightly
- ______________-
- Transfer to a warmed serving bowl
- Top with onions and bacon

It can be bought on line from Father's country ham and is bacon smoked with cinnamon,as far as I can tell. I would not presume to make it myself especially since they make it so well. Thanks for asking.
