How to make it

  • Pre-heat broiler. Broil pork, turning occasionally, until cooked through, about 20 minutes.
  • Remove to a platter, cover to keep warm.
  • Meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add onions and salt and pepper and cook until onions are golden, about 10 minutes.
  • Add sugar and cook until onions are caramelized, about 3 minutes longer.
  • Add port or sherry, balsamic vinegar, blueberries and tomatoes and bring to a boil.
  • Remove from heat.
  • Thinly slice pork and serve with the sauce.

I have 3 cases of blueberries I had to freeze...thank you for a savory dish to use some of these little berries. We love pork and I think this combination will be absolutely awesome. On the menu plan for the week. Great post.

I've gotten tired of eatting pork chops because I'd just een cooking them my normal way. This recipe makes me want to eat them again. Since my broiler is horrilbe I think I'll just brown the pork in a skillet and finish it off in the oven. Thanks for the ideas
