How to make it

  • In a large pot saute, onion, celery, carrot, and garlic until onion is golden.
  • Reduce heat to medium-low, mix in tomatoes and tomato paste.
  • Bring to a simmer, and stir in peppers, garlic powder, and oregano.
  • Slowly crumble and stir in the brown sugar until dissolved. Turn heat to low.
  • Cover and simmer 15 minutes.
  • Uncover, bring to a brisk simmer and cook a further 15 minutes, stirring occasionally.
