Sweet,creamy cupcakes with coconut cream,frosting and toasted coconut.

  • 2c Baker's flaked coconut
  • 1/2c sweetened condensed milk
  • 1 pkg. Betty Crocker Super-Moist yellow cake mix
  • 11/4c water
  • 1/3c vegetable oil
  • 3 eggs
  • 1 tub Betty Crocker Rich and Creamy vanilla frosting
  • 1c Baker's flaked coconut toasted

Directions
  1. Heat oven to 350. Place paper baking cup in each of 24 regular size muffin cups
  2. In med. bowl,stir 2c coconut with condensed milk and set aside.
  3. In large bowl,beat cake mix,water,oil and eggs witj electric mixer on low 30 seconds.. Beat on medium for 2 mins.,xcraping bowl occasionally. Divide batter evenly among muffin cups(3/4 full). Top each with about 1 heaping tsp. coconut mixture.Bake as directed on box for cupcakes. Cool 5 mins;remove from pan to wire rack. Cool completely about 30 mins.
  4. Frost cupcakes. Dip tops in toasted coconut. Store loosely covered at room temp.
