  • For the mocha sponge
  • 6 eggs
  • 200 gm sugar
  • 15 gm gelatine
  • 80 ml water
  • 200 gm refined flour
  • 30 gm cocoa powder
  • 10 gm baking powder
  • 50 ml refined oil
  • 10 ml vanilla essence
  • For the meringue
  • 3 egg whites
  • 115 gm caster sugar
  • 15 gm instant coffee powder
  • For the chocolate icing
  • 175 gm plain chocolate
  • 30 ml coffee essence (dissolve 10 gm instant coffee powder in 3 ml water)
  • For the garnish
  • 400 ml fresh cream
  • 150 ml sugar syrup
  • 225 gm chocolate flakes

Directions
  1. For the mocha sponge
  2. Preheat the oven to 160°C.
  3. Beat the eggs, sugar, gel, water, flour, baking powder and cocoa powder together for about 5-6 minutes.
  4. Add the oil and the vanilla essence to the mixture.
  5. Pour the batter into a greased 8-inch cake pan. Bake for about 40 minutes or till a skewer inserted in the centre comes out clean.
  6. Remove from pan, and cool to room temperature.
  7. For the meringue
  8. Whip the sugar, egg white, and coffee powder for about 5-6 minutes.
  9. Fill into a piping bag (8 inch wide bag-available in stores).
  10. Spoon out the meringue from the piping bag with a spatula on to a greased baking tray and pat down into a ½-inch thick and 8-inch wide circle (like a chapatti).
  11. Bake in an open oven at 100° C for 2 hours, until the meringue turns completely dry and crispy.
  12. Remove from the pan and cool to room temperature.
  13. To assemble
  14. Cut the mocha sponge into two layers and place the meringue disc between the layers.
  15. Then, layer the chocolate sponge with the chocolate icing covering the top and the sides of the cake completely
  16. For the chocolate icing
  17. Melt the chocolate in a double boiler. Mix in the coffee essence.
  18. Gently beat the cream for five minutes and add it to the above mixture.
  19. Refrigerate for 10 minutes.

I love Tortes, as a child growing up we didn't have a lot of money so really what I looked forward to every year was the special torte we would get on Christmas. Lovely picture, and post.

Hi Jiffyo This is another one of those challenging cakes you want me to try so I can become as good at baking as you are. One question I haven't a clue as to what 50 ml refined oil is never in all my travels have I seen refined oil except at a gas station and I know you do not mean motor oil.Question two is the topping like a "Ganache".

P.S. I will try this as soon as I gather all the ingredients, it does sound like a really tasty treat.
