Ingredients
  • 2 Tbs. butter
  • 2# fish
  • 1/2 cup milk
  • 3/4 cup fine ground cornmeal
  • 3 Tbs. finly chopped fresh rosemary
  • 1/4 cup parmesan cheese
  • 1 Tsp. salt
  • 1 tsp. pepper-freshly ground
  • 2 cloves garlic-minced

Directions
  1. mix all dry ingredients
  2. in a saute pan(big enough to hold all the fish)melt butter and saute garlic(if your pan can't hold all the fish,fry in 2 batches and use 1/2 garlic and 1/2 the butter)for 1 minute
  3. dip fish in milk,then dredge in seasoned cornmeal.
  4. cook until browned on both sides,about 3 minutes per side
  5. if cooking in 2 batches,cook remainder of garlic for 1 minute in the remaining butter, to start the second batch
  6. serve with fresh lemon quarters,green salad and crusty bread.
