Ingredients
  • BAKE & RISE BATTER:
  • Cooking Spray
  • 1-1/2c all-purpose flour
  • 2 pk Rapid Rise Yeast
  • 1/3c sugar
  • 1/2t salt
  • 6T butter, melted
  • 1/2c very warm milk (120* to 130* F)
  • 1 egg, room temperature
  • 1/4t almond extract (optional)
  • CHERRY FILLING:
  • 48oz pitted cherry pie filling, in heavy syrup, drained
  • STREUSEL TOPPING:
  • 1/3c all-purpose flour
  • 1/3c sugar
  • 2T butter, softened

Directions
  1. Mix dry ingredients in a mixing bowl. Add butter to milk and adjust temperature to 120* to 130* F. Add milk/butter mixture to dry ingredients slowly while whisking. Add egg and almond extract while continuing to whisk to a smooth consistency.
  2. Pour batter into a pre-sprayed 8 X 8-inch baking dish.
  3. Top batter with drained cherry pie filling. Mix streusel topping in small bowl with a fork until uniform consistency; sprinkle over cherry filling. A small capacity food processor works well also.
  4. Bake by placing in a COLD oven; set temperature to 350º F. Bake for 40 minutes or until done.
