Blueberry Vinegar Recipe

Ingredients
  • 3 cups fresh blueberries
  • 2 cups white or rice vinegar
  • 2 TB honey

Directions
  1. Using a stainless steel or enamel saucepan combine 1 1/2 cups of the blueberries with vinegar;
  2. Bring to a boil; reduce heat and simmer, uncovered for 3 minutes;
  3. Stir in honey; remove from heat;
  4. Pour mixture through a strainer and let it drain into a bowl;
  5. Discard berries;
  6. Transfer strained vinegar to a clean 1 quart jar or bottle; add remaining 1 1/2 cups blueberries to the jar or bottle;
  7. Cover tightly with a non-metal lid;
  8. Store vinegar in a cool, dry place for up to 6 months.
