Nassau Grits

- 1-1/2 cups finely chopped, cooked smoked ham shopping list
- 2 small green peppers, chopped fine shopping list
- 2 medium onions, chopped fine shopping list
- 7-8 roma tomatoes, (or vine ripened) OR 1 *large* can tomatoes shopping list
- 1 pound bacon-fried crisp and crumbled shopping list
- grits shopping list
How to make it
- In skillet, fry bacon and put aside
- Leave 2 tablespoons bacon grease in pan
- Saute onions and peppers in bacon grease until soft
- Add ham and stir
- Saute on *low* heat for 20 minutes
- Chop tomatoes
- Add tomatoes and simmer for about 1 hour
- Meanwhile crumble bacon
- In separate pan cook about 2 cups grits according to directions
- When grits are cooked, *May* add a little butter to grits, and stir ham mixture into grits
- Pepper to taste
- *May* add a little hot sauce
- Pour into dish
- Serve hot with bacon crumbled on top
- Serves 10
