Ingredients

How to make it

  • As each item is prepared, place all contents in a suitable plastic container or in your food processor/blender.
  • Cut avocados in half and then remove stones.
  • Fully scoop out flesh of each half and then chop roughly into 1cm/1/2 inch cubes.
  • Coursely chop both onions into small cubes.
  • Crush 1 to 6 cloves of garlic, according to taste.
  • Slice and de-seed 1-3 birds eye chillies, according to preference.
  • Finely chop a bunch of cilantro/coriander leaves.
  • Put all of the ingredients so far into a plastic container or into your blender.
  • Add the lime and lemon juice.
  • Finally add the salt and black pepper.
  • Then either mash/stir manually or using the lowest setting or burst mode on your blender until you have a semi-smooth mixture.
  • For best results, serve after 2 hours in the fridge or immediately if time is of the essence.
  • (I prefer the light use of a blender as it produces a finer texture but you can simply mash the ingredients in the plastic container if you wish.)

    Debra, my understanding is a pastry blender is a hand held tool used to cut butter/lard into the flour. It has a handle and then in a u shape attached on either side of the handle is 5 strands much like a whisk. Of course there probably is an electric one but this is what my hand held one looks like.

    I am going to be brave and try this soon...I thought I didn't like avocado until I tried it in your taco dip recipe earlier, it was so good with lemon juice, I'll have to give it a fair shake!

    You can see a photo of a pastry blender on the egg salad post on pinchmysalt.com I used one to mash the eggs and there is a photo of it towards the end of the post.

    I've never used a blender for my guacamole but I think I might try it because I like using onion for flavor but prefer not to chew up chunks of onion! This recipe sounds great but I don't know if I can find bird's eye chilies here. I'll use jalapenos instead!

    Chefcarolyn thanks for your comments. I'm not sure if I know what a pastry blender is. Is it like a whisk or is it an attachment that might come with a mixer? Can you describe what the tool looks like?

    A pastry blender works wonderfully for making guacamole. You can work it as much as you want and still have some chunky goodness left.
