Japanese Mixed Tempura Fritters Recipe
This a type of Japanese mixed fritter with everything combined in the same bite. Use a traditional soy, mirin dipping sauce or a mayonnaise based sauce.

Ingredients
  • 1/2 pound scallop or shrimp
  • 1 onion
  • 1 carrot
  • 1 sweet potato
  • 12 small white mushrooms or shitaki mushrooms
  • Tempura batter
  • Vegetable oil for frying
  • BATTER:
  • 1 egg
  • 1 cup ice water
  • 1 cup all purpose flour

Directions
  1. BATTER:
  2. Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to overmix the batter.
  3. MIXTURE:
  4. Tear scallops into small strips or slice shrimps thinly. Thinly slice onion. Cut carrot into thin strips. Peel and slice sweet potatoes into thin pieces. Leave small mushrooms whole or slice shitaki thinly. Make tempura batter. Heat oil to 340 F degree in a deep pan. Mix the ingredients in the batter. Take a scoop of the ingredients in a large spoon and slip into the oil. Fry tempura until brown.
