Japanese Mixed Tempura Fritters

- 1/2 pound scallop or shrimp shopping list
- 1 onion shopping list
- 1 carrot shopping list
- 1 sweet potato shopping list
- 12 small white mushrooms or shitaki mushrooms shopping list
- Tempura batter shopping list
- vegetable oil for frying shopping list
- BATTER: shopping list
- 1 egg shopping list
- 1 cup ice water shopping list
- 1 cup all purpose flour shopping list
How to make it
- BATTER:
- Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to overmix the batter.
- MIXTURE:
- Tear scallops into small strips or slice shrimps thinly. Thinly slice onion. Cut carrot into thin strips. Peel and slice sweet potatoes into thin pieces. Leave small mushrooms whole or slice shitaki thinly. Make tempura batter. Heat oil to 340 F degree in a deep pan. Mix the ingredients in the batter. Take a scoop of the ingredients in a large spoon and slip into the oil. Fry tempura until brown.
