Cajun Style Stuffed Chicken  Breast  Thighs Recipe
This dish is great with salads, cream potato, corn and your desert of course.

Ingredients
  • 12 boneless chicken breast / thighs (leaving the skin on is optional I leave it......)
  • 1 to 2 tbsp on Olive oil
  • 12 slices of Bacon
  • 1 1/2 lbs chopped Shrimp ( shrimp is optional can sub. with crawfish or sausage or use spinach )
  • 1 maybe 2 cups of shredded cheese( THIS can be any kind..american, chedder, etc.)
  • your favor seasons...( slap yo' mama, or tony's / salt, pepper )
  • 6 tbsp of parsley chopped fine
  • 6 tbsp of onions chopped fine
  • 2 tsp of minced garlic
  • 5 to 6 tbsp of yellow or white onions
  • non- stick skillet
  • bowl med size
  • tooth picks
  • baking pan

Directions
  1. Clean chicken
  2. Cut almost in half of the thickness of chicken sort of like going from one side to the other.
  3. place aside.
  4. Take your shrimp an clean...then chop into 3 pieces
  5. heat Olive oil in your non -stick skillett
  6. placing the shrimp into the skillett saute' just about 2 minutes. not letting them cook all the way ....just a little.....
  7. remove from skillett and set aside. to cool .to touch not hot....
  8. In a bowl put all of your seasoning... cool shrimp, onions, garlic and your shredded cheese ..stir it up to blend all.
  9. take your chicken and rub your favor seasoning (like slap yo mama)
  10. with the chicken opened where you sliced it grab some of the cheese and onions and shrimp and place into it....
  11. fold it over to close it ( try not to over stuff you need enough to do all of your chicken)
  12. then take your bacon strip and wrap around the out side of the piece of chicken.
  13. Take your tooth pick to hold it in place.
  14. Place the chicken on to a glass baking pan or just a pan that will work in your oven.
  15. Continue till all is finished...no more chicken or cheese/shrimp mixture.
  16. Bake in Oven @ 350 degrees for 1 hour
  17. This is a great meal.....serve with your favorites....
