Mashed Potatoes With Buttermilk And Dill Recipe
A delicious spin on mashed potatoes. So creamy with a little burst of flavor! Goes well the Pollo Avellino sauce as a gravy!

Ingredients
  • 2 pounds Russet potatoes peeled and cubed
  • 1 tsp salt
  • 1/4 cup low-fat milk
  • 3/4 cup buttermilk
  • 2 tsp finely chopped dill
  • 1 tsp thinly sliced chives
  • Freshly ground black pepper

Directions
  1. In a large saucepan, combine the potatoes, 1 tsp salt, and enough cold water to cover.
  2. Bring to a boil over high heat
  3. lower the heat to maintain a simmer and cook until fork tender, about 10 minutes
  4. Drain the potatoes and return to the pan
  5. Mash the potatoes and stir in the milk and buttermilk and dill
  6. Season with salt and pepper to taste and serve

Perfect combo - buttermilk and dill. I use that combo in my quiches a lot. Also, you can toss in a bit of chunky blue cheese dressing (I like Ken's the best) for a treat but I don't know how that would go with your mashed potatoes. Thanks for being a buddy!
