Turkey Enchiladas

- 1/4 cup chopped onion shopping list
- 1 clove garlic, minced or pressed shopping list
- 1 tablespoon butter or margarine shopping list
- 2 cups diced or shredded cooked turkey shopping list
- 1 can (4oz) diced green chilies or 1/4 cup minced green bell peppers shopping list
- 1/4 teaspoon dried oregano leaves shopping list
- ----For the sauce----- shopping list
- 2 tablespoons butter or margarine shopping list
- 3 tablespoons all-purpose flour shopping list
- 2 cups chicken broth shopping list
- 1/2 cup sour cream shopping list
- 8 corn tortillas shopping list
- 1 1/2 cups grated Monterey Jack, Longhorn or colby cheese shopping list
- 1 can (4oz) sliced black olives, drained shopping list
How to make it
- Preheat oven to 375.F
- Saute onion and garlic in the butter. Stir in turkey, chilies(reserving 1 tablespoon for garnish) and oregano. Heat thoroughly. Set aside.
- In a saucepan, melt the 2 tablespoons butter. Stir in flour. Cool for 1 minute. Gradually stir in chicken broth. Cook until slightly thickened.
- Add sour cream. Remove from heat.
- Stir 1/2 cup of the sauce into turkey mixture.
- Dip each tortilla in sour cream sauce. Fill with 4 tablespoons turkey mixture and 2 tablespoons cheese. Roll up. Place in buttered baking dish. Pour remaining sauce over tortillas. Sprinkle with remaining cheese, reserved chilies and olives.
- Bake for 20 minutes.

I just made these enchilada's tonight from my left over Christmas turkey and I LOVED them. Super easy to make although it can be a little messy cause you use your hands to roll them but its really yummy. I would give it a 10 if I could.

this recipie looks tasty and delicious. ive got to try it and see if it close to the one i make my self with turykey meat. its a great way to use up the left over turkey from the christmas dinner too.
