Ingredients

How to make it

  • Preheat oven to 375.F
  • Saute onion and garlic in the butter. Stir in turkey, chilies(reserving 1 tablespoon for garnish) and oregano. Heat thoroughly. Set aside.
  • In a saucepan, melt the 2 tablespoons butter. Stir in flour. Cool for 1 minute. Gradually stir in chicken broth. Cook until slightly thickened.
  • Add sour cream. Remove from heat.
  • Stir 1/2 cup of the sauce into turkey mixture.
  • Dip each tortilla in sour cream sauce. Fill with 4 tablespoons turkey mixture and 2 tablespoons cheese. Roll up. Place in buttered baking dish. Pour remaining sauce over tortillas. Sprinkle with remaining cheese, reserved chilies and olives.
  • Bake for 20 minutes.

    Just completed this dish with my leftover Thanksgiving turkey. I used bell peppers instead of green chiles with turkey mix and garnished dish with green chiles before baking. The taste is moderate which is great if some can't handle spicy food. My family is loving it!

    I haven't eaten these yet, but I made them in two stacks (like in New Mexico) because I couldn't get the corn tortillas to roll without them ripping apart. I think flour tortillas would have worked better.

    I just made these enchilada's tonight from my left over Christmas turkey and I LOVED them. Super easy to make although it can be a little messy cause you use your hands to roll them but its really yummy. I would give it a 10 if I could.

    Love the idea of the sour cream added to the sauce - a bit different from the 'white' enchilada recipe I use...bookmarked for sure!

    this recipie looks tasty and delicious. ive got to try it and see if it close to the one i make my self with turykey meat. its a great way to use up the left over turkey from the christmas dinner too.
