Tired of turkey sandwiches? try these turkey enchiladas they're full of flavor but not real spicy. You can serve with your favorite salsa for extra spice and flavor.

Ingredients
  • 1/4 cup chopped onion
  • 1 clove garlic, minced or pressed
  • 1 tablespoon butter or margarine
  • 2 cups diced or shredded cooked turkey
  • 1 can (4oz) diced green chilies or 1/4 cup minced green bell peppers
  • 1/4 teaspoon dried oregano leaves
  • ----For the sauce-----
  • 2 tablespoons butter or margarine
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • 8 corn tortillas
  • 1 1/2 cups grated Monterey Jack, Longhorn or Colby cheese
  • 1 can (4oz) sliced black olives, drained

Directions
  1. Preheat oven to 375.F
  2. Saute onion and garlic in the butter. Stir in turkey, chilies(reserving 1 tablespoon for garnish) and oregano. Heat thoroughly. Set aside.
  3. In a saucepan, melt the 2 tablespoons butter. Stir in flour. Cool for 1 minute. Gradually stir in chicken broth. Cook until slightly thickened.
  4. Add sour cream. Remove from heat.
  5. Stir 1/2 cup of the sauce into turkey mixture.
  6. Dip each tortilla in sour cream sauce. Fill with 4 tablespoons turkey mixture and 2 tablespoons cheese. Roll up. Place in buttered baking dish. Pour remaining sauce over tortillas. Sprinkle with remaining cheese, reserved chilies and olives.
  7. Bake for 20 minutes.

This recipie looks tasty and delicious. ive got to try it and see if it close to the one i make my self with turykey meat. its a great way to use up the left over turkey from the christmas dinner too.

I just made these enchilada's tonight from my left over Christmas turkey and I LOVED them. Super easy to make although it can be a little messy cause you use your hands to roll them but its really yummy. I would give it a 10 if I could.


I have been looking for this recipe for 2 years! I used to make time and again and somewhere I lost the recipe. I am making this tonight! Can't wait!!!

Alterations


Maybe add some left over veggies to make it a little healthy.


Going to throw on some sliced avacado when they are out of the oven. Yummy!


Use raw cheese instead.
