Russian Hot Pot Recipe
This simple dish is a big hit at my house. Pair with a crusty loaf of bread and butter, dinner is done. I also make a pot of this when entertaining friends and there are barely ever any leftovers!

Ingredients
  • 2 cups water
  • 2 beef boullions cubes
  • 1 pound new red potatoes
  • 1 pound green cabbage
  • 1 medium onion
  • 1 16oz. can of whole tomatoes, drained
  • 1.5 pounds of low fat ground beef

Directions
  1. Place water and boullion in a 4 quart dutch oven and bring to a boil. While waiting to boil, scrub potatoes, leaving peels on, and cut into 1/2 inch cubes(about 3.5 cups):add to pot. Cut cabbage into 1/2 inch chunks(about 6 cups). Cut peeled onion into chunks, add to pot. Break up tomatoes into pot and crumble RAW beef into pot, mix well. Cover and simmer for about 30 minutes or until potatoes are tender. Season to taste with salt and pepper. Serve with crusty bread and butter.
