  6. Place bacon pieces in a large skillet, fry until crispy. Remove bacon and drain. Leave bacon grease in skillet.
  7. Toss chopped onion and green peppers into bacon grease, cook until slightly softened.
  8. Sprinkle flour over onion and green pepper, stir until vegetables are coated and flour is moistened.
  9. Continue to cook for 1 - 2 minutes.
  10. Add chicken broth, stirring well scraping bottom of pan until well incorporated.
  11. Add seasoning, stir well.
  12. Bring to boil then turn down heat to a low simmer.

Another home run! in maine you rarely find grits in a restaurant, wo i have to make my own. this seems like an elegant recipe for grits and the shrimp spread over a warm bed of creamy grits hits all of my buttons. i have never had possum tho.. bet it's good!

This is a wonderful recipe. I have made it several times now and it just gets better. I did add a little cheddar to the grits just because I always add cheddar to my grits. This is a classic Low Country recipe that has become my personal favorite. I would give you a 10 if I could!
Thanks, Ferri
