Shrimp And Grits

- ~*Grits*~ shopping list
- 1/2 C ground grits - stone ground shopping list
- 2 C chicken broth shopping list
- 2 1/2 Tbsp butter shopping list
- 1 - 1/2 C milk shopping list
- 2 oz cream cheese shopping list
- salt (to taste) shopping list
- ~*shrimp Sauce*~ shopping list
- 1/2 - 3/4 lb raw shrimp -peeled and deveined (you can use precooked frozen - defrost before preparing) shopping list
- 3 Tbsp lemon juice shopping list
- 3 Slices bacon, cut into small pieces shopping list
- 1 Medium green pepper, finely chopped shopping list
- 1 Medium white onion, finely chopped shopping list
- 2 green onions, chopped shopping list
- 2 Heaping Tbsp flour shopping list
- 2 C chicken broth shopping list
- 1 tsp garlic powder shopping list
- 1 tsp parsley flakes shopping list
- salt and black pepper, to taste shopping list
- ground red pepper, to taste shopping list
How to make it
- ~*Grits*~
- Combine broth and butter in saucepan. Bring to a boil. Add grits and salt, stir well.
- Reduce to low simmer. Stir often to be sure grits are not sticking. Slowly add milk, a little at a time - as needed, as grits begin to thicken. Cook for approx. 40 minuts, stirring often. When done cut in cream cheese and stir until well incorporated.
- ~*Shrimp Sauce*~
- Clean shrimp (defrost and rinse). Pour lemon juice over shrimp, toss and set aside.
- Place bacon pieces in a large skillet, fry until crispy. Remove bacon and drain. Leave bacon grease in skillet.
- Toss chopped onion and green peppers into bacon grease, cook until slightly softened.
- Sprinkle flour over onion and green pepper, stir until vegetables are coated and flour is moistened.
- Continue to cook for 1 - 2 minutes.
- Add chicken broth, stirring well scraping bottom of pan until well incorporated.
- Add seasoning, stir well.
- Bring to boil then turn down heat to a low simmer.
- Drain shrimp, stir into gravy, cook for 5 minutes if shrimp is raw - if using pre-cooked shrimp cook long enough to heat shrimp through, approx 2 - 3 minutes.
- Serve over grits, garnish with green onions and bacon.

another home run! in maine you rarely find grits in a restaurant, wo i have to make my own. this seems like an elegant recipe for grits and the shrimp spread over a warm bed of creamy grits hits all of my buttons. i have never had possum tho.. bet it...more

This is a wonderful recipe. I have made it several times now and it just gets better. I did add a little cheddar to the grits just because I always add cheddar to my grits. This is a classic Low Country recipe that has become my personal favorite....more
