Penne In Cream Sauce With Sausage Recipe
PENNE IN CREAM SAUCE WITH SAUSAGE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stuart Estate in Grand Saline, Texas in 1991.

Ingredients
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion sliced
  • 3 garlic cloves minced
  • 1 pound sweet Italian sausage
  • 2/3 cup dry white wine
  • 14-1/2 ounce can diced peeled tomatoes
  • 1 cup whipping cream
  • 6 tablespoons fresh chopped parsley
  • 1 pound penne pasta
  • 1 cup parmesan cheese

Directions
  1. Melt butter and oil in heavy large skillet over medium high heat.
  2. Add onion and garlic then sauté until golden and tender about 7 minutes.
  3. Remove sausage from casings then crumble and add to skillet and sauté until golden brown.
  4. Drain excess drippings then add wine and boil until almost all liquid evaporates about 2 minutes.
  5. Add tomatoes with juice and simmer 3 minutes.
  6. Add cream and simmer until sauce thickens slightly about 5 minutes.
  7. Stir in 4 tablespoons parsley.
  8. Meanwhile bring a large pot of water to boil and cook pasta until tender but still firm to bite.
  9. Drain pasta and pour into warm large bowl.
  10. Pour sauce over pasta then add 3/4 cup of cheese and toss to coat.
  11. Sprinkle with remaining parsley and cheese and serve immediately.
