this is a recipe given to me from a neighbor along with a loaf of this great chocolate bread.. I hope you enjoy it as much as my family is. I haven't made this myself yet.

Ingredients
  • 1 cup vegetable oil
  • 2 1/2 cups sugar
  • 3 eggs
  • 1/3 cup cocoa powder
  • 1 TBSP. vanilla
  • 1 cup walnuts, chopped
  • 1 cup chocolate chips ( optional )
  • 2 cups grated Zucchini
  • 3 cups flour
  • 1 teasp. baking soda
  • 1/4 teasp. baking powder
  • 1 TBSP. cinnamon
  • 1 teasp. salt

Directions
  1. mix eggs, sugar, oil, cocoa, and vanilla together
  2. stir in zucchini, nuts and chips
  3. mix the flour, baking soda, baking powder, cinnamon, and salt together
  4. add to the Zucchini mixture. stir just until flour mixture is moistened
  5. do not over beat
  6. grease 2 small loaf pans. pour mixture into them
  7. bake at 350'F for 60 mins or until a toothpick comes out clean
  8. cool in pan for 10 mins then turn out onto a rack
