This dish is very versatile, it's good served with poultry, seafood, meat (I like it on grilled steak or on a hamburger) delicious as a topping for mashed potatoes. Also can be use in an omelette or over scrambled eggs. My family love this.

Ingredients
  • 6 cups sliced large sweet onions or red onion or medium yellow onion (1/4-inch thick)
  • 3/ cup bottled Italian dressing
  • 1/4 teaspoon crushed dried oregano leaves
  • 1 small green pepper, seeded, sliced
  • 1/2 cup grated Parmesan or Romano cheese

Directions
  1. Separate onions into rings.
  2. Heat 1/2 cup well-shaken dressing in a large skillet. Add onions and oregano.
  3. Saute over low heat until onions are transparent, stirring often. Add remaining dressing and green pepper, stirring.
  4. Sprinkle cheese over top. Cover skillet for 1 minute and let stand with heat off. Serve with pancake turner, cheese side up.
