How to make it

  • Heat oven to 325. Place 8(4 oz) custard cups,ramekins,or small ovenproof coffee cups in a large roasting pan. Set aside.
  • Bring cream to a simmer in a small saucepan over medium heat. Remove pan from the heat. Add chocolate and and stir till smooth.Let cool to room temperature.
  • Whisk mascapone and sugar in a large bowl until smooth.Add egg,1 at a time, whisking after each addition until smooth. Add vanilla,salt and rum(if using);whisking until blended. Add chocolate mixture;whisk gently until blended.
  • Divide custard evenly among cups. Put roasting pan in the oven. Add enough boiling water to roasting pan to come halfway up the sides of the cups. Cover roasting pan with foil. Bake until custards are set but jiggle slightly in the centers,about 30 mins. Custards will continue to firm as they cool.) Transfer pots to a wire rack and cool to room temperature. Cover and refrigerate until chilled,at least 4 hours or overnight. Serve with Sweetened whipped cream and Chocolate Curls,if desired
