Ingredients
  • Tomato sauce (already prepared and leftover from something else)
  • 2 eggs
  • crusty bread

Directions
  1. Spread tomato sauce thickly and evenly in the pan. (about 1 cup)
  2. Heat through.
  3. When sauce begins to bubble, crack each egg in the center of the pan and fry until whites are cooked through and centers are still soft.
  4. Move sauce around in the pan gently as eggs are frying so as not to let it burn or stick(sauce and egg whites will blend or look curdled a bit- this is ok, you want this)
  5. Slide the contents of the pan onto 2 plates and eat immediately.
  6. *Important-Serve with crusty bread for dipping (even a toasted english muffin does the trick nicely)
  7. Enjoy!

frankly, i did a search before posting this and could not believe it hadn't already been posted!
this is definitely not so well known because it's hard to find in a restaurant...

i've only seen it on one menu in my life!

My Italian Grandmother used to make this regularly, but added some provolone cheese until melted...I can still smell it-YUM!
