Quick Bean Soup

- ham bone and any meat scraps clinging to it shopping list
- 2 tablespoons of oil shopping list
- 2 medium onions, coarsely chopped shopping list
- 3 stalks of celery, chopped shopping list
- 1 green pepper, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 16oz can pinto beans shopping list
- 1 16oz can black beans shopping list
- 1 16oz can black-eyed peas shopping list
- 1 16oz can great northern beans (or can use navy beans) shopping list
- 1 16oz can red kidney beans shopping list
- 1 can lentil soup (Progresso) shopping list
- 1 28oz can diced tomatoes shopping list
- 4 to 6 cups of water or chicken stock shopping list
- juice of 1/2 lemon shopping list
- hot sauce shopping list
- 1/2 teaspoon cumin shopping list
- 1/2 teaspoon black pepper shopping list
- 2 bay leaves shopping list
- Pinch of ginger shopping list
- 2 cups of real ham, cubed (not lunchmeat) shopping list
How to make it
- Saute chopped onions and peppers and celery in oil in LARGE stock pot; add garlic;
- Add all beans (do not drain), soup, and tomatoes with all their juices, stirring to combine well;
- Add water or stock to desired consistency;
- Add lemon juice, spices, and hot sauce;
- Simmer for one and a half hours;
- Add cubed ham and simmer for another 30 minutes;
- Remove ham bone and bay leaves before serving.
