Moqueca De Peixe Fish Cooked In Coconut Milk

- 1.5 kg firm white fish steaks, e.g. snapper shopping list
- 3 large garlic cloves shopping list
- Malagueta pepper (or fresh piri-piri or any small hot Asian chilli)* shopping list
- 1 big bunch of cilantro, chopped shopping list
- salt shopping list
- juice of 8 limes shopping list
- 1 very large onion, chopped shopping list
- 5 tomatoes, chopped shopping list
- 3 tablespoons olive oil shopping list
- 1/2 red capsicum, finely sliced shopping list
- 1/2 small green capsicum, finely sliced shopping list
- 3 tablespoons chopped parsley shopping list
- 5 tablespoons dende oil* shopping list
- 225 mL coconut cream shopping list
- 2 tablespoons grated coconut shopping list
- *Malagueta peppers are available at Asian food markets. shopping list
- *Dende oil is available from specialist delicatessens. (is an oil from palm) shopping list
How to make it
- Rinse the fish and pat it dry.
- Using a mortar and pestle pound and mix the garlic, malagueta pepper, 6 tablespoons of coriander leaves, salt and lime juice together.
- Spread this mixture over the fish, then spread enough of the onions and tomatoes to cover on top. Leave for half an hour.
- Pour the olive oil into a large saucepan and add the fish with the seasoning on top.
- Add the remaining tomatoes, onions, capsicum, parsley, half the dende oil and 80 mL of the coconut cream.
- Cover the saucepan and bring to boil over a very low heat for 15 minutes, then add the remaining dende oil and coconut cream.
- Add some more coriander leaves and, if needed, cook for an extra 5 to 10 minutes stirring very gently from time to time.
- When the fish is tender but firm, remove the pan from the heat and sprinkle on some freshly grated coconut.
