Apple Pancakes With Cider Syrup Recipe

Ingredients

~*PANCAKES*~

4 Cups pancake or biscuit mix

1tsp cinnamon

2 Eggs, beaten

2-2/3 Cups milk

1-½ Cups chopped apples

~*SYRUP*~

½ Cup sugar

2 Tbsp cornstarch

¼ tsp cinnamon

¼ tsp nutmeg

2 Cups apple cider

2Tbsp lemon juice

¼ Cup butter

Directions

~*PANCAKES:

Mix all ingredients together. Fry in hot pan or on hot griddle, as you normally would make pancakes.

~*SYRUP:

In a medium saucepan, mix together sugar, cornstarch, cinnamon, and nutmeg. Turn to medium heat and gradually add apple cider and lemon juice, whisking often. Bring mixture to a boil – boil and whisk for 1 minute. Remove pan for heat. Add butter, whisking until fully melted and incorporated into the mixture.

Serve syrup hot over apple pancakes.
