How to make it

  • In medium bowl, beat egg whites until stiff but not dry. Set aside.
  • In separate bowl, beat egg yolks until light and lemon colored. Lightly but thoroughly stir in cottage cheese, flour, and salt. Fold in egg whites.
  • Drop by small spoonfuls onto butter hot griddle. Cook until bubbles appear on surface and bottom is golden brown. Turn pancakes. Cook until second side is browned. Serve immediately with jam or syrup.

    I like the salty edge the cottage cheese gave the pancakes. And unless I did something seriously wrong, no way did my cakes come out crepe looking as in your picture, especially with the folded in egg whites.

    I tried this recipe this morning. I had to sign up just to say how delicious these are! As light as batter was, the pancakes had great strucure. think I'll make them again tomorrow....

    My late sister in-law made these for me once. Personally, I hate cottage cheese, and I was not looking forward to eating them. I was shocked and amazed at how good they taste! If you have picky eaters at home, I would advise not telling them the ingredients - why spoil a delicious breakfast?
