Great recipe...I added 1/2 t. vanilla, increased the cottage cheese to 1 c. and blending the whole lot to make a smooth batter. Excellent! I use my magic bullet to make it really quick & easy. After whipping the whites as stiff as a bullet can get them, add the yolks and whip some more, add the salt, vanilla & flour and whip. Finally the cottage cheese and whip until smooth. Really light & creamy with a beautiful brown color and slight crisp to the edges. Hope you try it this way. Enjoy!

My late sister in-law made these for me once. Personally, I hate cottage cheese, and I was not looking forward to eating them. I was shocked and amazed at how good they taste! If you have picky eaters at home, I would advise not telling them the ingredients - why spoil a delicious breakfast?
