Ingredients

3 eggs, separated

3/4 c. small-curd cottage cheese

1/4 c. flour

1/4 tsp. salt

Butter

Strawberry jam or maple syrup

Directions

In medium bowl, beat egg whites until stiff but not dry. Set aside.

In separate bowl, beat egg yolks until light and lemon colored. Lightly but thoroughly stir in cottage cheese, flour, and salt. Fold in egg whites.

Drop by small spoonfuls onto butter hot griddle. Cook until bubbles appear on surface and bottom is golden brown. Turn pancakes. Cook until second side is browned. Serve immediately with jam or syrup.

My late sister in-law made these for me once. Personally, I hate cottage cheese, and I was not looking forward to eating them. I was shocked and amazed at how good they taste! If you have picky eaters at home, I would advise not telling them the ingredients - why spoil a delicious breakfast?

Great recipe...I added 1/2 t. vanilla, increased the cottage cheese to 1 c. and blending the whole lot to make a smooth batter. Excellent! I use my magic bullet to make it really quick & easy. After whipping the whites as stiff as a bullet can get them, add the yolks and whip some more, add the salt, vanilla & flour and whip. Finally the cottage cheese and whip until smooth. Really light & creamy with a beautiful brown color and slight crisp to the edges. Hope you try it this way. Enjoy!
