These make great Christmas, Valentine, Easter and all occasion cookies. The kids will love decorating them. Cream cheese in a classic cookie will make the dough very tender.

Ingredients
  • 1 C Sugar
  • 1 C Butter, softened
  • 3 (3 oz pkg) Cream Cheese
  • 1/2 tsp salt
  • 1/2 tsp Almond extract
  • 1/2 tsp Vanilla
  • 1 Egg, yolk only
  • 2 C All pourpose flour
  • colored sugar or decorating icing

Directions
  1. Combine all ingredients, except flour & colored sugar in a large bowl
  2. Add flour a tablespoon at a time, mix well.
  3. Seperate dough into 3 batches.
  4. Wrap in plastic wrap & refrigerate 3 hours.
  5. Heat oven to 375F.
  6. On floured surface roll out 1 batch of dough to 1/8" thickness.
  7. Cut with cookie cutters.
  8. Place 1" apart on ungreased cookie sheet. (decorate with colored sugar if desired)
  9. Bake @ 375F 6 - 10 minutes until light golden brown.
  10. Remove from cookie sheet right away.
  11. Decorate with icings if desired.

I make a cookie similar to these. They don't get tough the way regular rolled cookies do because of the cream cheese. I use the lower fat kind.


These cookies will not get tough if you do not rol then twice. Low fat cream cheese tends to leave too much moisture in the dough.
