Cheesy Chicken Tetrazzini

- ¼ cup unsalted butter shopping list
- ¾ pound mushrooms, sliced shopping list
- 2 garlic cloves, minced shopping list
- salt and pepper shopping list
- ¼ cup all purpose flour shopping list
- 2 cups chicken broth shopping list
- 1 cup half-and-half or whole milk shopping list
- 3 tblspn dry sherry shopping list
- 4 cups shredded cheddar cheese shopping list
- ½ pound penne pasta (cooked drained) shopping list
- 4 cups chicken torn into bite size pieces shopping list
- 1 ½ cups toasted fresh bread crumbs shopping list
How to make it
- 1. preheat oven 350
- 2. Melt butter in a large sauce pan over medium-high heat. Add mushrooms, garlic, ¼ tsp salt, and 1/8 tsp pepper. Sauté until liquid evaporated (about 12 min)
- 3. Reduce heat to medium. Sprinkle in flour and cook, stirring, for 1 min. Gradually add broth and half and half, stirring until blended. Reduce heat and simmer until thickened, 3-5 min.
- 4. Remove from heat. Add sherry and 3 cups cheese, stirring until cheese melts. Add ¼ tsp salt and 1/8 tsp pepper. Stir in pasta and chicken. Pour into a buttered shallow 3-quart baking dish.
- 5. Mix remaining cheese and bread crumbs; sprinkle over casserole.
- 6. Bake, uncovered, until the sauce bubbles and the top is lightly browned, 35-40 min

Ern, this was great! I posted the pic...I put a couple of tomatoes in it, and I lightened it up a little bit too. I also used some leftover smoked dark meat, subbed some of the shredded cheese for low-fat cottage cheese, and only used a little chedde...more

I have made this a few times and had to tell you how much I love it! I omitted the sherry and used fat-free half & half and it was still wonderful. Great use for leftover chicken!
