  • ¼ cup unsalted butter
  • ¾ pound mushrooms, sliced
  • 2 garlic cloves, minced
  • Salt and pepper
  • ¼ cup all purpose flour
  • 2 cups chicken broth
  • 1 cup half-and-half or whole milk
  • 3 tblspn dry sherry
  • 4 cups shredded cheddar cheese
  • ½ pound penne pasta (cooked drained)
  • 4 cups chicken torn into bite size pieces
  • 1 ½ cups toasted fresh bread crumbs

Directions
  1. 1. preheat oven 350
  2. 2. Melt butter in a large sauce pan over medium-high heat. Add mushrooms, garlic, ¼ tsp salt, and 1/8 tsp pepper. Sauté until liquid evaporated (about 12 min)
  3. 3. Reduce heat to medium. Sprinkle in flour and cook, stirring, for 1 min. Gradually add broth and half and half, stirring until blended. Reduce heat and simmer until thickened, 3-5 min.
  4. 4. Remove from heat. Add sherry and 3 cups cheese, stirring until cheese melts. Add ¼ tsp salt and 1/8 tsp pepper. Stir in pasta and chicken. Pour into a buttered shallow 3-quart baking dish.
  5. 5. Mix remaining cheese and bread crumbs; sprinkle over casserole.
  6. 6. Bake, uncovered, until the sauce bubbles and the top is lightly browned, 35-40 min

How could anybody not like this...sounds like something out of the Olive Garden.

Dear Ern, Yoy forgot to mention mushrooms, which in my case is all you had to say. Yum!


Ern, this was great! I posted the pic...I put a couple of tomatoes in it, and I lightened it up a little bit too. I also used some leftover smoked dark meat, subbed some of the shredded cheese for low-fat cottage cheese, and only used a little chedder! The mushrooms (I used baby bellas) in this were great w/ the sauce! YUM!
