Ingredients
  • 1 cup olive oil
  • 24 garlic cloves, peeled

Directions
  1. Heat oil in small saucepan over medium-low heat.
  2. Add garlic; cook over very low heat until soft, about 1 hour (do not brown).
  3. Pour into tightly closed jar when cool.
  4. DO AHEAD: Can be made 1 month ahead. Keep chilled and completely covered in oil. Always use clean spoon to remove garlic.

I just made duck confit and came across your recipe looking for ways to serve it. Although I may not use the glarlic confit for the duck, I do see this garlic confit as a necessarry staple. Can't wait to try it.
