How to make it

  • Heat oil in small saucepan over medium-low heat.
  • Add garlic; cook over very low heat until soft, about 1 hour (do not brown).
  • Pour into tightly closed jar when cool.
  • DO AHEAD: Can be made 1 month ahead. Keep chilled and completely covered in oil. Always use clean spoon to remove garlic.

    I just made duck confit and came across your recipe looking for ways to serve it. Although I may not use the glarlic confit for the duck, I do see this garlic confit as a necessarry staple. Can't wait to try it.
