Butternut Squash Soup Recipe

Ingredients

1 butternut squash

4 sweet potato

4 parsnips

1 medium onion

2 pints vegetable stock

cumin

salt

Directions

Peel and dice the vegetables

Sweat in a little butter

Add stock

Bring to the boil

Simmer for 20-30 mins

Add seasoning and cumin to taste
