I'd never even seen a butternut squash or even sweet potatoes until I made this soup this year. I went 'hunting' for the veg and I'm so glad I made the effort.This soup goes nicely with bread of your choice. I had it with a pitta

Ingredients
- 1 butternut squash
- 4 sweet potato
- 4 parsnips
- 1 medium onion
- 2 pints vegetable stock
- cumin
- salt
Directions
- Peel and dice the vegetables
- Sweat in a little butter
- Add stock
- Bring to the boil
- Simmer for 20-30 mins
- Add seasoning and cumin to taste
