Almond Flan Recipe
Delicious flan recipe. traditional vanilla custard taste with almond overtones. if you like flan, this is the recipe for you!

Ingredients
  • 1 cup milk (whole or 2% is ok as well)
  • 3 large eggs
  • 3 egg yolks
  • 3/4 cup sugar
  • 2/3 cup plain slivered almonds
  • 14-21 oz sweetened condensed milk (1-1 1/2 cans 14oz per can)
  • 1 tsp mexican vanilla extract

Directions
  1. Put sugar in 9x3 cake pan. place on medium heat burner to carmelize the sugar. heat until sugar liquifies (3-5 minutes). when sugar is golden brown remove from heat and allow to cool and harden.
  2. in a blender, mix until smooth almonds, condensed milk, milk, eggs, yolks, and vanilla.
  3. pour mixture into the cooled carmelized sugar.
  4. place the 9x3 cake pan into a larger container that contains approx 1" of water. place an aluminium tent loosely over the cake pan.
  5. bake for 1hr 15min until the flan is firm in the center.
  6. remove and allow to cool a bit before placing in the refridgerator for +1hrs to cool and set.
  7. to serve, run a spatula along the edge of the pan to loosen. flip over and scrape the carmel from the bottom of the pan. enjoy!

Sounds good...I've never seen mexican vanilla though...;D


Mexican vanilla is the "real", good stuff. a major export from mexico. "Adams" vanilla extract is a pretend vanilla. real vanilla extract is made from alcohol and vanilla bean only. you can taste the difference, making mexican vanilla worth a purchase. you can also make your own vanilla extract by soaking a vanilla bean in a jar with a cup of good vodka. takes approx 6 months to cure fully.

I have made my own Homemade Vanilla,there is a difference.

My Son likes Flan,I think he enjoys using the hand held torch,to carmelize the top.
