How to make it

  • Sprinkle chicken with oregano, garlic, cumin, and pepper (or Cuban seasoning) and salt. Brown the chicken in olive oil.
  • Add the onions, green pepper, can of tomato sauce, bay leaf, Bijol (or Turmeric), beer and water. Cover and cook on low for 15 minutes.
  • Add the rice. When the rice has absorbed some of the liquid, cover and simmer for about 20-25 minutes.

    Thanks!! This is one of my favorite comfort foods as well. When I was little, my Mom used to cook it for the family at least once a week. So, I try to cook it at least once a month for my family. There are so many great recipes to cook and so little time! :)
