  • 2 (12 ounce) container fully cooked luncheon meat (e.g. Spam), cubed
  • 4 eggs, beaten
  • 3ounces Cheddar cheese, grated
  • 1 tsp - Tarragon

Directions
  1. Heat a non-stick skillet over medium heat. Pour in eggs, then Spam. sprinkle with Tarragon. Cook, stirring, until eggs are nearly done, then sprinkle cheese over, and stir until melted.

Actually, all spam jokes aside, this recipe sounds very good to me. I too must eat more protein and occasionally have reduced fat and sodium spam with eggs. Tastes great and is quite the comfort food for me. Thank you for the idea of adding tarragon to the mix. That is also one of my favorite flavors.


I grew up with Spam & eggs. This is great! Very nostalgic for me; it pleases me to know that this old fav from my youth has made it to the world wide web so that others may enjoy!

Born and raised in Hawaii Spam is BIG there!!! Most people don't appreciate spam. Ha. I'd better add some of my spam recipes for those of you out there who know about this "mystery meat" hahaha,that is truly an acquired taste. Thanks for a new twist. Hmmmm, maybe we should have a new group labeled Spam. What do you think???

Alterations


Not an alteration but an alternative recipe with spam. I add a 12 ounce can of stewed, diced and seasoned tomatoes (with oregano, basil and the like, store bought.) while simmering the spam slices. I cook up elbow macaroni pasta, drain and toss. Sprinkle red pepper flakes on top and enjoy!
