Ingredients

How to make it

  • Wash and peel potatoes, slice into paper thin slices and pat dry with paper towels
  • Slice onion as thin as possible
  • Heat half the bacon fat in a heavy skillet and fill pan with alternating layers of potato, onion and cheese, beginning and ending with potato, sprinkle each layer with salt and pepper
  • Dot the top with remaining bacon fat
  • Cook over medium heat until potatoes are almost tender.
  • Turn the Haggerty carefully onto a plate or platter and slip it topside down, back into the skillet
  • Continue cooking until potatoes are done
  • To Serve, cut into wedges
  • 4 servings
