- 3 medium potatoes shopping list
- 1 lrg onion shopping list
- 4 Tbl bacon fat shopping list
- 3/4 c grated cheddar shopping list
- salt and pepper to taste shopping list
How to make it
- Wash and peel potatoes, slice into paper thin slices and pat dry with paper towels
- Slice onion as thin as possible
- Heat half the bacon fat in a heavy skillet and fill pan with alternating layers of potato, onion and cheese, beginning and ending with potato, sprinkle each layer with salt and pepper
- Dot the top with remaining bacon fat
- Cook over medium heat until potatoes are almost tender.
- Turn the Haggerty carefully onto a plate or platter and slip it topside down, back into the skillet
- Continue cooking until potatoes are done
- To Serve, cut into wedges
- 4 servings
